One Dollar Ravioli

Prepare 2 servings of Basic Pasta Dough and refrigerate.

Saute 5oz fresh spinach, 8 oz mushrooms, and two cloves garlic roughly chopped with a pinch of salt.

Add 1/4 cup water to help steam.

After vegetables are cooked, let cool and add 16 oz ricotta, 1/4 cup freshly grated mozzarella.

Sprinkle with salt, pepper and sugar and mix.

Prepare pasta until thickness 5.

Add lumps of 1 Tbs of mix to one side of the dough and ring that side with egg wash.

Fold over loosely and cut into pieces.

Pick up pieces and squeeze together at the edges, removing all air.

Toss into boiling water for a few minutes until the ravioli float to the top.

Serve with Tomato Pasta Sauce and freshly grated parmesan.
