Heat salt, pepper, basil and fresh diced garlic in olive oil.
Add chunks of tomatoes, some vinegar and bring to a simmer.
Stir in sprinkling of sugar to taste and flour to thicken.
Add ketchup if necessary.
Simmer until saucey.
To make bolognese, mix with browned 80% lean ground beef or turkey.
